Cut off any visible fat from the steaks.
Place the steaks in a large bowl and cover with half of the ginger dressing.
Cover the bowl and place in the refrigerator for 2 to 3 hours, or overnight, stirring occasionally.
When you're ready to cook the steaks, place a tablespoon or two of olive oil in a large frying pan set over medium heat.
Add the chopped onions, and sliced mushrooms if you're using them. Cook, stirring occasionally, until the onions begin to turn translucent.
Remove the sautéed onions to a bowl or plate and set aside while you cook the steak.
Add additional olive oil to the pan, if necessary, and turn the heat to medium high.
Cook the steak, or steaks, for a minute or two on each side. If you are using a thicker cut of meat, adjust cooking time accordingly. You could also cook the steaks on your bbq grill if desired.
Remove the cooked steaks to a large serving platter, sprinkle with salt and pepper if desired, and let rest for 5 minutes.
Top the steaks with the grilled onions and mushrooms.
Serve with additional ginger dressing, if desired, on the side.
