Oven Roasted Sweet Potatoes with Herbs

Quick and easy recipe for herb-roasted sweet potatoes.

Cook Time 40 minutes

Ingredients
  

  • 4 whole sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/4 tsp black pepper or whole peppercorns add more or less to taste
  • 1 tsp salt add more or less to taste

Equipment

  • Vegetable peeler
  • Large knife
  • Cutting board
  • Baking sheet
  • Large mixing bowl
  • Large mixing spoon
  • Mortar and pestle set

Method
 

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Peel the sweet potatoes, and cut into slices approximately 2-3 inches long by 3/4 inch wide.
  3. Place the potato slices in a large mixing bowl and coat with the olive oil.
  4. Add the rosemary, thyme, oregano and peppercorns to a mortar and crush with the pestle.
  5. Sprinkle the herbs and salt over the potatoes and mix until the potatoes are evenly coated.

  6. Place the potatoes on a large baking sheet.
  7. Place the sheet in the oven, and bake for approximately 30 to 40 minutes, stirring half way through.
  8. Place the roasted sweet potatoes on a serving dish and serve family-style at your next Thanksgiving Day, Christmas Dinner or other holiday celebration

Notes

For an extra special burst of flavor, toss the roasted sweet potatoes with a bit of grated parmesan cheese before serving. Nom-nom-nom!
