Oven Roasted Sweet Potatoes

I am a HUGE fan of sweet potatoes. I love them baked, fried, mashed, etc. I don’t think I ever met a sweet potato I didn’t like! Here’s a recipe I came up with a few years ago for oven roasted sweet potatoes flavored with lots of herbs.

I like to use whole, dried herbs in this recipe. You can use a coffee grinder, or mortar and pestle set to grind up the herbs, before adding them tossing them with the sweet potatoes.

Oven Roasted Sweet Potatoes with Herbs

Quick and easy recipe for herb-roasted sweet potatoes.

Cook Time 40 minutes

Equipment

  • Vegetable peeler
  • Large knife
  • Cutting board
  • Baking sheet
  • Large mixing bowl
  • Large mixing spoon
  • Mortar and pestle set

Ingredients
  

  • 4 whole sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/4 tsp black pepper or whole peppercorns add more or less to taste
  • 1 tsp salt add more or less to taste

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • Peel the sweet potatoes, and cut into slices approximately 2-3 inches long by 3/4 inch wide.
  • Place the potato slices in a large mixing bowl and coat with the olive oil.
  • Add the rosemary, thyme, oregano and peppercorns to a mortar and crush with the pestle.
  • Sprinkle the herbs and salt over the potatoes and mix until the potatoes are evenly coated.

  • Place the potatoes on a large baking sheet.
  • Place the sheet in the oven, and bake for approximately 30 to 40 minutes, stirring half way through.
  • Place the roasted sweet potatoes on a serving dish and serve family-style at your next Thanksgiving Day, Christmas Dinner or other holiday celebration

Notes

For an extra special burst of flavor, toss the roasted sweet potatoes with a bit of grated parmesan cheese before serving. Nom-nom-nom!
